Two vegan days!


Yes, I have made it two days completely vegan. It doesn't sound like much, especially since I was vegan for about 3 years over 25 years ago, BUT, it's hard to make that transition. Food has become so sophisticated, it's nearly impossible to know what is actually in it! Go figure.

So, the highlights were ramen noodles with no packet (just tamari), lots of OG nuts, potato wedges baked in olive oil, watermelon juice - fresh from the juicer, OG hummus and veggies, OG carrot juice (yes! juiced fresh), a new frozen entree from Light Life . . .like tofurkey (turkey alternative stuffed with stuffing and cranberries - DELICIOUS!), and lots of salad. I figure, you don't need a blow-by-blow every time.

One thing I do know, it is so easy to pick up food and eat it without realizing it. Think how many calories we ingest by simply licking our fingers, picking up that last pecan that fell on the counter, or the one little jawbreaker that fell out of the packet. It's something I am really watching closely now.
